Best patisseries in Melbourne?

My partner and I will likely be moving to Melbourne this year, she is a patisserie chef and so we are looking to visit as many of the best patisseries around Melbourne as we can to see where she might like to apply for work. She is looking for high quality pastry and entremets. Perhaps a bit of chocolate work aswell.

I'm sure Melbourne has lots to offer, so hoping for some recommendations for the best, high end patisseries.
