Hypoallergenic breed for an apartment

My SO (22M) and I (23F) are looking to get a dog sometime during summer 2024. This is going to be a long one - I like details - so strap in.

Let me first address the allergy part, please don't come to this post with comments regarding the term "hypoallergeic" because I already know. I'm allergic to MANY things and I have done a good amount of poking around on this topic. I grew up with two Havenese, one during my entire childhood that I was never allergic to in any capacity, that dog passed in 2021 and since then my folks who I only lived with intermittedly during college got another Havense. I am allergic to him and I couldn't tell you why, lots of sneezing but overall doable symptoms. This past fall I also fostered with intention to adopt a chocolate lab who after three days I had to bring back to the shelter because I couldn't breathe in my own home (oh yeah I also have asthma, triggered by an allergic reaction). She give me hives, sneezing, the whole 9 yards. So this is where I am now: I am defintely allergic to high shedding, dander factories, but the hypoallergic dogs are a toss up, however my experience with those hypoallergic dogs that I am allergic to are much more mild and again I deal with alleries so much already its a drop in the bucket.

Okay here's the second bit. I live in an apartment. Currently, its a 780 sqft 1br apartment on the 5th floor. We are planning to move to a 2br in August 2024 that will be 1,060 sqft (no idea what floor that would be but same apartment, only 5 floors). It is possible that the 2br apartment will be closer to the ground floor but lets roll with the 5th floor. I live in Denver, the apartment complex is very dog freindly, there are several small dog play areas and I am about a miles walk to a large park that i frequent often by myself anyways.

Will this be your first dog? If not, what experience do you have owning/training dogs? * I had a dog growing up, SO did not. Feeding and walking responsibilites throught it all.
Do you have a preference for rescuing a dog vs. going through a [reputable breeder]( http://ownresponsibly.blogspot.com/2011/07/identifying-reputable-breeder.html)? * I don't but I dont think i can swing $3,000 on a puppy.
Describe your ideal dog. * 30-50 (maybe even 60) lb, growing up with small dogs has made me crave a medium sized dog. I run almost every day and would be more than happy to take the dog to the local park for ~2 hours a day, a full walk would be ~4 miles. Shorter walks 2 miles. I would love a dog that can keep up with this level of activity but has ability to chill inbetween. We are also skiiers in the CO winter and budgeting to send the dog to day care on those days we are skiing. We are extremely active in the summer, lots of long hikes and such. I'm also really excited about training a dog so something response to daily training would be great. I work remotely 99% days in the month but the one day a month I go into the office dogs are welcome. I'm not sure how I feel about the prospect of a velcro dog esp given the fact that I will probably be with this dog all the time during a regular week so maybe a little bit of indepence wouldn't hurt but I think I'm overthinking that.
What breeds or types of dogs are you interested in and why? * I have previously looked and PWD but decided those dogs need a yard to be their happiest. I truly don't know, thats why I am here.
What sorts of things would you like to train your dog to do? * Basic commands are a must and I would also like to put a lot of emphasis on recall training.
Do you want to compete with your dog in a sport (e.g. agility, obedience, rally) or use your dog for a form of work (e.g. hunting, herding, livestock guarding)? If so, how much experience do you have with this work/sport? * No
How long do you want to devote to training, playing with, or otherwise interacting with your dog each day? * I would do at least 1 hour probably 2
How long can you exercise your dog each day, on average? What sorts of exercise are you planning to give your dog regularly and does that include using a dog park? * I run daily so at least that in the morning, 2-4 miles depending. Probably another long walk after work. There are a lot of dogs at this park I run at so some socalizing there as well, fetch is also great at this park on a long leash.
How much regular brushing are you willing to do? Are you open to trimming hair, cleaning ears, or doing other grooming at home? If not, would you be willing to pay a professional to do it regularly? * I dont mind brushing the dog and doing minor grooming care at home. If it needs to be groomed everything 3 months would be the most frequent I'm willing.
**Personal Preferences**
10) What size dog are you looking for? * 20-50
11) How much shedding, barking, and slobber can you handle? * Slobber is okay, miminal shedding and a playful bark is okay.
12) How important is being able to let your dog off-leash in an unfenced area? * This is so important! I plan to train recall quite a bit until trust is bit and then using off-lease as a great way to let the dog blow off all the steam. I used to play softball so I will hurl a tenis ball for fetch.
**Dog Personality and Behavior**
13) Do you want a snuggly dog or one that prefers some personal space? * My SO would like a cuddle bug who loves petting, I have no preference.
14) Would you prefer a dog that wants to do its own thing or one that’s more eager-to-please? * I think I would prefer some indepence.
15) How would you prefer your dog to respond to someone knocking on the door or entering your yard? How would you prefer your dog to greet strangers or visitors? * non-agressive is the minimum, a few barks are okay but not lasting barking.
16) Are you willing to manage a dog that is aggressive to other dogs? * Not at this time, too many dogs around in my daily life.
17) Are there any other behaviors you can’t deal with or want to avoid? * I'm most worried about consistent hyperactive behavior, easly bored despite my stated amount of exercise/training would not be ideal.
18) How often and how long will the dog be left alone? * This is seasonal, between 6-8 hours a day once a week during winter for ski days. During the summer rarely, maybe a 2 hours on the occasionally date night. Year round during the work week, probably never.
19) What are the dog-related preferences of other people in the house and what will be their involvement in caring for the dog? * Stated above
20) Do you have other pets or are you planning on having other pets? What breed or type of animal are they? * No
21) Will the dog be interacting with children regularly? * No
22) Do you rent or plan to rent in the future? If applicable, what breed or weight restrictions are on your current lease? * Rent currently. No weight limit but restricted breeds: "Akitas, Alaskan Malamutes, Bull Mastiffs, Chows, Doberman Pinschers, German Shepherds, Pit Bulls, Presa Canarios, Rottweilers, Shar Peis, Siberian Huskies, Staffordshire Terriers, Wolf Hybrids or any variation or mixes of these breeds."
23) What city or country do you live in and are you aware of any laws banning certain breeds? * Denver, CO
24) What is the average temperature of a typical summer and winter day where you live? * Hot summer days, little rain. Winter is mild with some really cold days sprinkled in (0-5 degrees).
