Visa Cambodia and Laos

We're arranging a trip around SEA and we wanted to know how the visa for the countries mentioned above works. (we both got Italian passport)

Is it better to apply online for the visa before getting in the country or it's just easier getting the visa on arrival ?

We'll mostly move trough bus among the countries rather than airplanes.
