Moving to new house, need router and mesh WiFi brands that will keep up with GB fiber

First off, I'm a retired tech guy (former incident response/forensic investigator) so I know my way around networks. But we've been world traveling for 5.5 years with no permanent home so I haven't kept up on the latest networking tech.

We're settling down and moving to a new home soon. There is GB fiber internet available and I've read it includes some sort of termination device for the fiber that provides one LAN port. As we won't be doing any TV or phone they have no need to supply me with a router, which is fine by me. Years ago I was a SonicWall reseller so always used their equipment on my home network. I need something new that will keep up with the GB speed for streaming. I have a Dell GB switch I'll run wired connections on and plan to add in some sort of mesh setup for WiFi but haven't decided on a brand yet. I have a Synology NAS that will be on the LAN. As far as I know the house is not wired for ethernet drops. I also plan to move into setting up various home-automation/smart devices.

I need advice for a premium router with WiFi and mesh options. The mesh can be a different brand from the router if needed. I've seen Ubiquity Dream Machine and Eero 6E names tossed out as quality products, as well as the newer WiFi 6E technology. We have current Apple products with WiFi 6. For the home automation gear plus older devices I'll need both 2.4 GHz and 5 GHz available.
